Blender Protein Pancakes (Easy, Macro-Friendly Recipe)

 

Why You’ll Love These Blender Protein Pancakes

I absolutely love a blender recipe - one where you toss everything in, hit blend, and you’re basically done. Blender pancakes are great but I have struggled to find a way to make them more “macro-friendly” (read: a bit higher protein and more balanced across all macronutrients) in order to make them filling - not just a sugary breakfast that leaves you hungry an hour later.

These blender protein pancakes are my solution: a higher-protein, better-balanced version that’s just as quick to make but actually keeps you full. They work just as well for a busy weekday breakfast as they do for a post-workout meal or a make-ahead option for meal prep. (You can freeze and re-toast them!). Keep them plain or dress them up with your favorite toppings to fit your preferences and make them a family-friendly option everyone will enjoy.

PREP TIME: 5 minutes || COOK TIME: 10 minutes || Makes 12 pancakes (4 servings)

INGREDIENTS YOU NEED:

Protein pancakes on a kitchen worktop
  • 1C old-fashioned oats

  • 1C cottage cheese

  • 3 large eggs

  • 2TB maple syrup

  • ¼ tsp kosher salt

  • 1 tsp baking powder

  • Splash of vanilla (optional)

  • Sprinkle of cinnamon (optional)

STEP-BY STEP Instructions

  • Step 1: Blend the batter. Add all ingredients to a blender and blend until smooth. Due to the oats this may take 1-2 minutes.

  • Step 2: Heat the pan. Heat a non-stick pan or griddle over medium heat. Lightly spray with cooking oil.

  • Step 3: Portion & cook. Use a ¼ cup measuring cup to pour out each pancake. Cook 1–2 minutes per side, or until golden brown.

Serving & Topping Ideas

  • Add flavor: Top with Greek yogurt, fresh fruit, nut butter, or a drizzle of syrup.

  • Make it more filling: Enjoy two servings (6 pancakes) for 30g protein / 15g fat / 44g carbs.

  • Boost the protein: Top with Greek yogurt and a peanut butter powder (PB2, PB FIt, etc.) drizzle.
